Pad Thai, my way






The two most important parts of making a good Pad Thai are cooking the noodles correctly, and cooking your veggies all the way through.

Ingredients:

  • 1 package flat rice noodles; ( the ones that look like fettuccine)
  • 1-2 limes depending on how many servings
  • 2 heads of broccoli or one large bag of pre-cut, raw broccoli (about 4 cups raw)
  • 1 bag of shredded carrots (about 3-4 cups)
  • 3 eggs
  • 1 cup shelled peanuts, chopped
  • 1 head of cilantro
  • 4 TBS soy sauce
  • 1 TBS crushed ginger paste
  • 1 TBS sesame seed oil
  • 1 bottle peanut sauce:
    • *You can buy your own peanut sauce, or you can make your own sauce
Directions:
  • In a medium sauce pan, heat your sesame seed oil, put in broccoli
  • Once the broccoli is cooked half way, put in the carrots an chopped onions
  • Mix in the soy sauce
  • Add salt and pepper to taste
  • Mix in the ginger paste
While the vegetables are cooking... cook the pasta

Once the pasta is done, drain and rinse; mix in the sauce, add the vegetables; 

*EGG OPTION: In your (empty) vegetable pan, on medium heat, crack your three eggs and mix gently; cook all the way through

Serve the pasta/vegetables and top with lime juice from one wedge, chopped peanuts and a sprinkling of cilantro.
