Hearty pasta with brussel sprouts, caramelized onions and feta cheese

 Pasta with roasted brussel sprouts, 

caramelized onions and feta cheese



Serves 6-8


1-lb brussel sprouts

1-2 medium sized sweet onions (or 1 large sweet onion)

1 cup feta, crumbled or cubed (go for the crumble!)

1 box pasta of your choice (go for long noodles!)

6-8 cloves of garlic (depending on how much you like garlic)

    * Butternut Squash ravioli would be delicious with this dish

Directions:

  • Brussel Sprouts
    • Pre-heat your oven to 425*
    • Rinse, stem and halve your brussel sprouts
    • In a microwave-safe bowl place 1/2 c water and cover it; put in microwave for 7-8 minutes or until tender. *mix half-way through.
    • drain and add a dash of olive oil, salt and pepper, toss in some garlic
    • spread on a lined baking sheet and put in center rack. 
    • Bake for 20 minutes
*Pro tips
Start your onions while your oven is pre-heating and your brussel sprouts are in the microwave. 
Start your water when your onions are simmering and your brussel sprouts are in the oven.*
  • Caramelize your onions:
    • Chop your onions in 1/4 and then into slices
    • Put your pan on medium-high heat 
    • add 1tbs butter, let melt
    • add your onions, increase heat
    • if you have 40 minutes to caramelize, lower heat after your onions begin to get crispy and let sit for 40 minutes
    • If you're s normal person and don't have extra time, add 1 tbs of real maple syrup, mix, lower heat to low and let sit for 15 minutes, stirring occasionally
  • PASTA:
    • Make your pasta. 
  • 10 minutes before your food is ready, sprinkle your feta on top of your onions, while in the pan.
    • *You can opt out of doing this and just sprinkle it on top if some folks don't fancy feta.
  • Plate your pasta, *add garlic if you wish, mix well,* add your brussel sprouts, and caramelized onions (with or without the feta)...
