This dish was pretty straight forward and was requested by my boyfriend. "Babe, I want cilantro lime chicken for dinner tonight." Oh boy...
Fresh lime juice and chopped cilantro, let chicken breasts marinate overnight
Couscous: Follow directions +1TBS water (Sometimes I like to add herbs and/or salt and pepper to the water as it obviously doesn't disappear, but it gets cooked into the couscous and gives an extra pop of flavor.
Squash: Chop into bite-size pieces, I tossed (real, ALWAYS real) maple syrup in a bowl with some melted butter-- brown sugar also works, brown in a pan and either keep cooking or put in oven; you can put in microwave for 5-8 minutes, until soft and then pan/oven cook if you are in a time crunch.
Pan-cook the chicken breast WITHOUT the sauce-- until brown, and then you may add the sauce the chicken marinated in as long as you bring it to a boil for a few minutes.
Everything is cooked to taste. Make sure everything is balanced based on your taste-buds, and remember if something is too salty/sour/sweet THERE IS ALWAYS AN INGREDIENT TO NEUTRALIZE OR COUNT-ACT THE OVER-POWERING FLAVOR!
