Scallops wrapped in Bacon with fresh spinach pasta, sun-dried tomatoes and blue cheese





This is a simple dish in both ease of directions and cook time from prep to serve.
  • Place you scallops in a bowl
    • sprinkle salt, pepper and 2 tsp of lemon juice
  • Make sure all the scallops get some of the mix
  • Wrap a single piece of bacon around each scallop and secure with a toothpick
  • Place each scallop on an oiled tin-foil lined pan, making sure they are not touching
  • Place in oven under broiler (lower top rack to second rung down)
  • Cook for 15 minutes or until bacon is crispy

Meanwhile...
  • Cook your fresh pasta (usually takes 3-8 minutes depending on the brand)
  • drain and rinse with cold water
    • This prevents the pasta from continuing to cook
  • Toss with lemon juice, oil, blue cheese and sun-dried tomatoes
