This is a simple dish in both ease of directions and cook time from prep to serve.
- Place you scallops in a bowl
- sprinkle salt, pepper and 2 tsp of lemon juice
- Make sure all the scallops get some of the mix
- Wrap a single piece of bacon around each scallop and secure with a toothpick
- Place each scallop on an oiled tin-foil lined pan, making sure they are not touching
- Place in oven under broiler (lower top rack to second rung down)
- Cook for 15 minutes or until bacon is crispy

Meanwhile...
- Cook your fresh pasta (usually takes 3-8 minutes depending on the brand)
- drain and rinse with cold water
- This prevents the pasta from continuing to cook
- Toss with lemon juice, oil, blue cheese and sun-dried tomatoes
