Polish-Italian Pizza-- a multicultural meal

So I would like to make a note about hot sauce; each food-- be that dish or cuisine, has a correlating hot sauce that pairs better than the rest. For example, Sriracha does not go well with Mexican food, and Tapatio does NOT go well with Chinese food. I find that Sriracha goes better with pizza and Mac and Cheese, and Tapatio is pretty much limited to Latino foods...

Now that I got that out of the way, my meal; I had Polish sweet rolls, tomato sauce, Munster cheese and pepperoni. Paired with Newcastle beer (boyfriend, if you leave it at my place it becomes fair game... remember this!) and ultimately Sriracha. Now, I think the main reason Sriracha goes better with a wider variety of Tapatio (remember, I keep small packets of Tapatio in my purse, briefcase and car at ALL times), is because it's thicker (like ketchup) and it has soy sauce. I think the sweetness of the Polish sweet roll balanced out very well with the chili taste of the Sriracha. The Newcastle was just a bonus.
