Freshly picked Cape Cod wild blueberry pie


My five year old niece is what I call a city mouse. Born and raised in Brooklyn. When my sister and brother-in-law brought my niece and nephew to the Cape this summer I was determined to expose them to a bit of country life. We picked four cups of wild blueberries-- you know, those tiny ones? She was patient and excited to run inside and measure to see if we had enough to make the pie.

This recipe was easy; Butter, flour (I like to use cake flour), shortening, ice water
mix dough and roll it out. Place dough over pie pan, cut or hand trim excess dough. Use excess dough to make lattice top.

In a big bowl put rinsed blueberries, a tiny bit of flour and sugar. Mix and pour into your pie crust. Put a few pieces of butter on top of the blueberries scattered about. Put lattice topping on, sprinkle with brown sugar and butter-- you can mix the two first or not.
