So, my mother helped me cook this dish. I had a basic recipe I wanted to follow, but it wasn't very good so I enlisted my mother whom has always been a trusted taste tester ("hey ma, does this milk taste bad?"). We decided to completely flip flop the recipe and go where the taste buds lead us.
Grey Poupon mustard, REAL maple syrup (if you are thinking of using the fake stuff, you should stop right now before you waste your money and time on the ingredients and just order delivery), fresh garlic, fresh ginger. Mix in a bowl and tweak the proportions until it suits your taste buds.
NOW this part is important; line your pan (glass is preferable, it's what all the cool kids are doing these days) with aluminum foil. Not only does this help cook the chicken to perfection, but it also seriously helps with clean up... Especially with the REAL maple syrup baking into your dish, unless the real Mr. Clean lives at your house, line your dish!
I served this dish with a steamed broccolini and a salad with tons of fresh veggies. This chicken came out so tender it literally fell off the bone... This is to say, I haven't eaten meat on a bone in over 20 years, so I was very happy I didn't have to debone my serving before sitting down to eat with the more dignified members of my family.
