Grown up Mac and Cheese



Two dishes that represent the yin yang of childhood... One, Mac and Cheese, that is guaranteed to make 99.9% of children happy, and brussels sprouts, guaranteed to make 99.9% of all children unhappy. Put together (plus a little twist with the mac and cheese), and you get the perfect balance of an adult version of the meal your child-self never thought you would willing eat, let alone prepare for yourself. I strongly suggest putting Sriracha on your Mac and Cheese. I like to do this one bite at a time, because if you accidentally put too much or get tired of the spice halfway through, then you're going to be miserable choking down what was supposed to be a celebration of growing out of your childhood aversion to brussels sprouts. Also, instead of using all the butter and milk the recipe calls for, try using some cream cheese. I personally like the whipped kind, and if you want to get really adventurous, try the whipped chive version.
